pumpkin pie variant

So after we made the pumpkin pies, we got the request to make Thanksgiving dessert.  Instead of making pies again, we made mini-pies.  Well, really they were gingerbread cookies baked in mini muffin tins with the pumpkin mousse piped in.  We sprinkled a little cinnamon and sugar on top for good measure.  They were adorable and delicious.  And everyone loved them - even the people that don't usually like pumpkin anything.
